Trying a few processes to make some strawberry, black pepper and cardamom gin.
Starting off with 4 500ml batches to see what strawberries are best so I'm dehydrating a punnet of strawberries in the oven for a few hours.
Then I'll try dehydrated vs fresh and try to flavour 2 with lemon zest and 2 with an orange zest.
I'm hoping for a blush colour but to still taste the gin and additional flavourings of pepper, cardamom and the zest.
