Nordic breads are the best (first introduced to me in Iceland). And the introduction of a local bakery called The Danish Pastry House below my office has really improved my work day.

Is it like a coarser sour dough?
Basically yes, I felt like everywhere I ate there I was served some vaguely similar yet still different coarse farmhouse sourdough (often rye) type bread. Always delicious. I know I was making a sweeping generalization though.

Yeah, my grandfather used to make bread with rye. It keeps it moist and eatable even after a week.
