Hans Zimmer is an absolute genius. Howard Shore is also another personal favorite.

Nick Cave and Warren Ellis normally do brilliant scores.

Favourite song would have to be 'Concerning Hobbits' from the Lord of the Rings films. It's just perfect <awe> That and the music for the Battle of Pellenor Fields just confirm how great Howard Shore is.
